Lovely and light, and very filling! I love the ample amount of fresh arugula, the crunchiness of the cabbage and pumpkin seeds, the pomegranate seeds provide a nice juicy pop, the butternut squash is light and provides a soft texture, and wow, the dressing and chive vegan cheese are so lovely and flavorful! Overall a delicious and delightful salad!

Vegetarian for 30+ years and cheese has always been a weakness but after the signature meal plan and green cleanse the vegan cheese in this salad was amazing! The rest of the salad ingredients were a colorful and flavorful mix.

Just had this colorful fall color salad and it was delicious. It seems small but that butternut squash does fill you up quickly. Really enjoyed the spin on the cold squash in a salad. Reccommended!

I love this salad. I did add my own avocado and some grape tomatoes to top it off, but overall it is a perfect salad on the lower carb side. I would personally like a little more of the vegan cheese (because it is delicious)! I may need to go back and get another tomorrow. =)

That cheese is nuts! Never thought I would rave about – or ever eat – vegan cheese. It was delicious – and so was the entire Autumn Salad I had for lunch today. Thanks Urban Remedy!
