Avocados, Oh My!

avocadosAvocados are a delicious, creamy fruit associated with many health benefits. Native to Mexico and Central America, botanically they are considered a berry. Most famous as the star ingredient in guacamole, this superfood should be an everyday staple for optimal health!

In Chinese medicine, avocados are cooling, which makes them perfect for spring and summer. The flavor is sweet, so it nourishes the body’s energy systems. They also lubricate the intestines and nourish the yin, meaning they are beneficial for dry skin, hair and eyes and great for anti-aging. They are also beneficial for the lungs, liver and stomach, helping with dry cough, irregular menstruation, stress and ulcers. Additionally, avocados are rich in inflammation-lowering monounsaturated fats, which are linked to heart health, and they contain triple the amount of potassium compared to bananas! Now that’s a superfood.

Raw Chocolate Mousse with Almond Crème

Avocado Mousse Professional IIngredients:

1 large ripe avocado

1/3 cup (1 oz/30 g) raw cacao powder

1/4 cup (2 fl oz/60 ml) almond milk

7-10 Medjool dates, pitted and coarsely chopped, or 2 teaspoons liquid stevia

1 teaspoon alcohol-free vanilla extract

1/4 teaspoon ground cinnamon

 

For the Almond Crème:

1/4 cup soaked almonds

2 tablespoons almond milk

1 tablespoon coconut palm sugar, or 1/2 teaspoon liquid stevia

Pinch of sea salt

Directions:

  1. To make the mousse, add all of the ingredients to a blender and blend for about 1 minute, until creamy.
  2. Divide the mixture between 2 individual custard cups.
  3. To make the almond crème, in a clean blender, combine all of the ingredients and blend on high speed until smooth.
  4. Top each mousse cup with a large dollop of the almond crème, cover, and refrigerate until firm, about 2 hours.

Makes 2 servings. Enjoy!
