Chia Pudding Parfait

This morning parfait is not only beautiful to look at but also tastes like heaven on earth. The chia base is rich in essential fatty acids and supports energy levels, making this a great way to start the day.

CHIA PUDDING PARFAIT 

1 cup chia gel (3 tablespoons chia seeds mixed well with 2 cups filtered water, stir well until gel forms)
1/3 cup cashew milk
Pinch Himalayan salt
¼ teaspooon vanilla extract
4 drops stevia OR 3 tablespoons coconut sugar
1/4 cup each organic blueberries, strawberries, or raspberries, and chopped banana

Combine chia gel, vanilla, salt, and cashew milk and mix well. Line the bottom of the parfait glass with ¼ cup fresh blueberries. Pour half of the chia gel over the blueberries. Top with bananas. Pour the rest of the chia mix on the bananas.  Top with strawberries.
